Ingredients
1 Cup Jasmine rice, uncooked
Non-stick cooking spray
2 (8 oz) Packages cream cheese, softened
1 Garlic clove, chopped
1/4 Teaspoon grated nutmeg
1 (10 oz) Package frozen spinach, thawed and well drained
1 Cup sharp cheddar cheese, divided
Crackers or chips
Instructions
Prepare rice according to package directions, cool.
Coat a 2 quart microwave safe serving dish with non-stick cooking spray.
In a large bowl combine cream cheese, garlic and nutmeg. Beat until light and fluffy.
Stir in rice, spinach and 3/4 cup cheddar cheese. Spread mixture into prepared dish. Top with remaining cheddar cheese.
Microwave for 4 minutes, or until cheese is bubbly.
Serve hot with crackers or chips.
