Ingredients
1 Cup small broccoli florets
1 Cup red bell pepper, cut into strips
1 Cup zucchini, sliced
1/2 Cup carrots, slices
1/2 Cup onion wedges
1 Pound boneless skinless chicken thighs, cut into strips
1 Packet Shake N� Bake barbecue glaze seasoned coating mix
2 Cups Basmati rice, cooked
Instructions
Preheat oven to 375�F. Spread vegetables into shallow foil-lined baking pan.
Coat chicken with coating mix as directed on package; place evenly over vegetables. Sprinkle with any remaining glaze mix.
Bake 30 minutes or until chicken is cooked through. Place rice on serving plate and top with the chicken mixture.
