Ingredients

Injection Marinade
2 Tablespoons cooking oil
2 Teaspoons Worcestershire sauce
4 Garlic cloves, crushed
1 Teaspoon liquid smoke seasoning
1 Teaspoon black pepper, fresh ground
4 Tablespoons lemon juice
1/8 Teaspoon celery salt
1/2 Teaspoon onion powder
1 Teaspoon Creole seasoning
1 Teaspoon parsley flakes
Rub
2 Tablespoons cooking oil
1/8 Teaspoon salt
1/4 Teaspoon black pepper
1/4 Teaspoon liquid smoke seasoning

Instructions

Clean chicken thoroughly and pat dry with paper towels. Mix injection ingredients in a small food chopper. Inject chicken in 8 to 10 places while removing needle slowly. Coat outside and cavity of chicken with oil. Combine salt, black pepper and smoke seasoning thoroughly and rub into and under skin of chicken. Cook in rotisserie for 15 to 18 minutes per pound.
