Ingredients
2 Tablespoons olive oil
1 Pound chicken breast, cut into 1� pieces
Salt and pepper
1/2 Cup sliced almonds
1 Teaspoon minced garlic
6 Cups spinach leaves, washed
2 Teaspoons lemon juice
1/2 Cup black olives
Instructions
Heat oil in a saut� pan over medium-high. Add chicken, season with salt and pepper, and saut� for 4-5 minutes, stirring occasionally, until all pieces are lightly browned.
Add almonds and cook for 1-2 minutes until just golden, then stir in garlic and cook for another minute.
Stir in remaining ingredients and cook for 1-2 minutes until spinach is wilted and chicken is cooked through. Serve over pasta, rice, or couscous.
