Ingredients
6 Whole bone-in chicken thighs
1 Cup onion, finely chopped
1 (14 oz) Can chicken broth
1 (14 1/2 oz) Can diced tomatoes
1 (15 oz) Can black beans, drained & rinsed
1 Cup frozen corn
1 (4 oz) Can mild green chilies
1 Tablespoon ground cumin
1 Tablespoon chili powder
1 Teaspoon salt
Toppings
Sour cream
Sliced avocado
Shredded cheese
Cilantro chopped
Tortilla strips, fried
Instructions
Spray crockpot with non stick cooking spray. Place chicken on bottom then all remaining ingredients except for the toppings; cook on HIGH for 3 to 4 hours or until chicken is done. With a slotted spoon, remove chicken from crockpot. Debone and chop chicken, discarding any skin, bones and fat. Put chicken back into crockpot and cook 30 minutes longer. Serve in bowls topped with desired toppings.
