Ingredients
1 1/2 Cups uncooked, long grain rice
4 boneless/skinless chicken breasts
1/2 Cup sliced fresh mushrooms; or canned
2 Cups orange juice
1 Cup chicken broth
1/2 Teaspoon salt
Pepper to taste
1 Can mandarin oranges slices, drained
Paprika and parsley (optional)
Instructions
Spread rice in the bottom of a greased, shallow 3qt baking dish. Top with the chicken and the mushrooms. Pour orange juice and broth over all of it. Sprinkle with salt and pepper. Cover and bake at 350º for 45 - 50 minutes or until chicken juices run clear and the rice is tender. Garnish with the oranges, paprika and the parsley if desired.
