Ingredients

2 Cups flour
2 Tablespoons salt
2 Tablespoons pepper
1 Tablespoon thyme
1 Tablespoon tarragon
1 Tablespoon ginger
1 Tablespoon ground mustard
1 Teaspoon garlic salt
1 Teaspoon oregano
2 Eggs
1/2 Cup milk
2 1/2 to 3 1/2 Pounds chicken pieces
Oil for frying

Instructions

Combine flour, salt, pepper, thyme, tarragon, ginger, mustard, garlic salt & oregano & store in airtight container.
In a shallow bowl, beat eggs and milk.
Place 2/3 cup coating mix in a large Ziploc bag. Dip chicken into egg mixture, then add to the bag, a few pieces at a time; shake to coat.
Heat 1/4" of oil in a skillet over medium high heat. Brown chicken on all sides; transfer to an ungreased 9� x 13� baking pan.
Bake uncovered at 350�F for 45 to 55 minutes or until juices run clear.
Makes 3 batches of chicken
