Ingredients
1/2 Whole chicken, cooked & boned
2 1/2 Tablespoons butter
1/2 Large onion, chopped
1/2 Pound mushrooms, sliced
1 Tablespoon flour
1 Cup chicken broth
1/2 Cup cream
2 Tablespoons sherry
4 Ounces Parmesan cheese, grated
1/2 Pound pasta, cooked
Salt and pepper to taste
Instructions
Preheat oven to 375F. Saut� mushrooms and onions, until soft, in 2 tablespoons butter. Set aside.
Melt 3 tablespoons butter and stir in 2 tablespoons flour. Cook over medium heat for about 1-2 minutes, stirring constantly.
Add chicken broth and cook over low heat for 1 minute. Stir in sherry and 3/4 of the cheese. Add saut�ed vegetables, and stir until cheese melts. Stir in cream.
Mix half of the sauce with the cooked boned chicken, and the other half with the cooked noodles. Spread the noodle mixture in a large casserole. Make a hole in the center and fill with the chicken mixture. Bake for 30 minutes.
Sprinkle with remaining cheese when you remove casserole from the oven.
