Ingredients
6 Chicken thighs, boneless, skinless
Marinade
1/4 Cup olive oil
Juice from 1 lemon
1/3 Cup Chinese soy sauce
1 Garlic clove, crushed
Very small dash saffron
Instructions
Put the chicken in a suitable oven-proof dish. Mix the marinade and pour that over the chicken and leave for a couple of hours. Turn the fillets over occasionally. Heat the oven to 425�F, put in the chicken and bake for about 20 minutes. Serve with rice and a salad. The marinade makes a delicious sauce.
