Ingredients

12 Ounces penne pasta, cooked
1 1/2 Tablespoons vegetable oil
1 Pound boneless skinless chicken breasts, cut into chunks
1/2 Cup onion, chopped
1 Teaspoon garlic, minced
2 Cups Alfredo sauce
1 Tablespoon chipotle in adobo sauce
2 Teaspoons chili powder
2 Teaspoons maple syrup
1/2 Teaspoon salt
8 Bacon slices, cooked & chopped
2 Tablespoons cilantro, chopped

Instructions

Heat oil in a skillet and cook chicken 4 minutes or until cooked through. Remove to a plate and reserve.
Reduce heat. Add onion to skillet and cook 3 minutes. Add garlic and cook 30 seconds. Stir in Alfredo sauce, chipotle, chili powder, maple syrup and salt, cook until bubbly. Stir in the chicken.
Place pasta back into the pot and stir in the Alfredo and chicken mixture. Spoon pasta onto a serving platter and garnish with the bacon and cilantro.
