Ingredients
1 Package Uncle Ben's brown and wild rice
3 Stalks celery, chopped
3 Green onions, chopped
1 Pound mushrooms, chopped
3 Boneless, skinless chicken thighs
Topping
1 Can cream of mushroom soup
1 Can cream of chicken soup
1 Cup mayonnaise
2 Teaspoons lemon juice
1/4 Teaspoon curry
1 1/2 Cups of Swiss, Jack, or Cheddar cheese, shredded
Instructions
Saut� chicken thighs in butter; when thighs are browned remove and saut� celery, green onions and mushrooms in same pan. Add more butter if needed. Prepare rice according to package directions and add saut�ed vegetables before rice is finished cooking. Layer rice mixture then chicken them soup mix. Bake for 30 to 45 minutes at 350�F. DO NOT COVER.
