Ingredients
1 Broiler, fryer chicken, cut into 8 pieces
1 1/2 Tablespoons vegetable oil
1 Quart chicken broth
1/2 Cup uncooked brown rice
1/4 Cup medium pearl barley
1/2 Medium onion, chopped
1 Bay leaf
1/4 Teaspoon dried basil
1 Teaspoon salt
1/8 Teaspoon pepper
4 Carrots, cut into 1" pieces
1 1/4 Cups frozen cut green beans
1 Celery rib, cut into 1" pieces
Instructions
In an 8 quart stock pot or Dutch oven, brown chicken in oil. Remove chicken and set aside. In the same pot combine the broth, rice, barley, onion, bay leaves, basil, salt and pepper; bring to a boil. Reduce heat. Return chicken to pan: cover and simmer for 45 minutes. Stir in the carrots, beans, and celery. Cook over medium heat for 30 minutes or until rice & barley are tender. Remove bay leaves before serving.
