Ingredients
3/4 Cup seasoned bread crumbs
1 Tablespoon Parmesan cheese
Salt & pepper to taste
1 Egg, beaten
1 Tablespoon plus 1 Teaspoon butter, melted & cooled
4 Chicken breasts, boneless, skinless and pounded to 1/4 inch thick
2 Ounces. Mozzarella cheese
2 Ounces sliced boiled ham
1/2 Cup broccoli, cooked & chopped
Instructions
Spray 9� x 13� x 2� pan; set aside. On sheet of waxed paper, combine breadcrumbs, Parmesan cheese and seasonings; set aside. In small bowl, using fork, combine egg and butter; mix well. Preheat oven to 375F. Roll each breast into egg mixture and crumb mixture, coat both sides evenly. On each breasts arrange 1/2 ounce shredded Mozzarella cheese, 1/2 ounce ham and 2 tablespoons broccoli on top of ham. Place near one end for easier roll-up. Roll to enclose filling. Arrange breasts seams down in baking pan. Bake until tender, about 40 minutes.
