Ingredients

2 Pounds boneless skinless chicken thighs cut into bite size pieces
1 to 2 Tablespoons olive oil
1 Garlic clove, crushed
1/4 Teaspoon ginger
1/2 Teaspoon crushed red pepper flakes
1/4 Cup bourbon
1/3 Cup firmly packed light brown sugar
2 Tablespoons catsup
1 Tablespoon cider vinegar
1/2 Cup water
1/3 Cup soy sauce
1 Tablespoon corn starch
1 Tablespoon water

Instructions

Heat oil in a large pot then add chicken pieces and lightly brown for about 6 to 7 minutes. Remove chicken from pot and put aside. Into the pot add garlic, ginger, red pepper flakes, bourbon, brown sugar, catsup, vinegar, water and soy sauce, heat over medium heat stirring to dissolve sugar and combine ingredients. Add chicken, bring to a boil and simmer for about 20 minutes. In a small bowl, mix corn starch and water. Add to chicken mixture to thicken sauce. Serve over rice.
