Barbecued Chicken Salad

Ingredients

1 Cup per person of chopped, smoked or barbecued chicken breast
1/3 Cup red seedless grapes, sliced
1/3 Cup celery, chopped
1/3 Cup apples, chopped (Fuji or Gala varieties are excellent)
1/3 Cup toasted pecans (or walnuts, cashews, peanuts, hazelnuts, pine nuts)
1/3 to 1/2 Cup mayonnaise to taste
Pepper to taste

Instructions

Use about a cup per person of chopped barbecued chicken breast. Add equal portions of about 1/3 cup sliced red (seedless) grapes, chopped celery, apple and toasted pecans. Mix with mayonnaise to taste and degree of "wet" desired. Pepper may be desired, but the barbecued chicken probably won't require more salt
This will create a delicious barbecued chicken salad that can be enjoyed by itself with fresh vegetables, greens or on toasted rolls.
To make this a really quick meal, purchase a barbecued chicken from Costco or other store.
