Steakburgers with Mushroom Sauce

Ingredients

1 Pound ground round or sirloin beef
1 Garlic clove, minced
3/4 Teaspoon dry mustard
1 Tablespoon oil
Salt to taste
Pepper to taste
3 Tablespoons butter
1 Tablespoons lemon juice
2 Tablespoons chopped scallions
3 Tablespoons dry white wine
3/4 Teaspoon Worcestershire
1/2 Pound fresh mushrooms, sliced

Instructions

Form chopped meat into 4 burgers. Sprinkle on each side with garlic and mustard. Put oil in large skillet. When very hot, add burgers. Fry over high heat for about 5 minutes or until browned on each side; transfer burgers to plate. Salt and pepper slightly. Add butter, lemon juice and scallions to skillet. Bring to boil. Stir. Add wine and Worcestershire and stir. Add mushrooms. Simmer several minutes, stirring constantly until sauce has reduced slightly. Spoon sauce over burgers and serve with bread or for gourmet steak sandwiches, serve burgers between 2 pieces of buttered French bread.
