Ingredients

2 Cups water
1 (12 oz) Bottle of lager beer
2 Medium onions, peeled, thick sliced and rings separated
2 Garlic cloves
3 Pound corned beef brisket with spice packet
4 Medium red potatoes, cut into 1" pieces
4 Medium carrots, cut into 1" pieces
1 Small cabbage, cut into wedges

Instructions

Add water, beer, onions, garlic, and corned beef with spice packet into pressure cooker. Close the lid and bring to high pressure. Cook for 1 hour. Release pressure using the natural release method. Transfer meat to serving plate and cover with foil. Add 1/4 cup water or beef stock to pressure cooker to deglaze pan. Place potatoes, carrots and cabbage in the cooker. Close lid, bring to high pressure and cook for 6 minutes. Quickly release pressure. Slice corned beef against the grain and serve with vegetables on the side.
