Ingredients
1 Tablespoon shortening
1 Pound beef stew meat, cut into 1� cubes; or 1 pound of ground beef
1 Large onion, sliced
1/2 Cup water
1 Large potato, pealed & thinly sliced
1/2 (10 1/2 oz) Can cream of mushroom soup
1/2 Cup sour cream
3/4 Cup milk
1/8 Teaspoon pepper
1/2 Cup grated cheddar cheese
3/4 Cup potato chips, crushed
Instructions
Melt shortening in large skillet. Cook and stir meat and onion in shortening until meat is brown and onion is tender. Add water; heat to boiling. Reduce heat; cover and simmer 50 minutes. Heat oven to 350�F. Pour meat mixture into ungreased baking dish, 13� x 9�; arrange potato slices on meat. Stir together soup, sour cream, milk, salt and pepper; pour over potatoes. Sprinkle with cheese and potato chips. Bake uncovered 1 1/2 hours or until potatoes are tender.
