Ingredients

2 Pounds lean ground beef
1/2 Pound Bob Evans Original sausage
3 Tablespoons butter
1 Medium onion, chopped
1/2 Envelope onion soup mix
3 Slices day old or lightly toasted bread, cubed & soaked in 1/2 cup milk then squeezed out excess milk
1/4 to 1/2 Cup dry fine breadcrumbs
2 Eggs, beaten
1 Teaspoon salt
2 Teaspoons pepper -- freshly ground
4 Tablespoons chili sauce
1 (4 oz) Can chopped green chilies, optional
4 Dashes hot sauce, to taste
Topping
4 Rashers bacon
8 Tablespoons catsup
5 Teaspoons brown sugar
2 Teaspoons Dijon mustard

Instructions

Mix enough catsup, mustard and brown sugar to make 1/2 cup topping.
Saut� the onions in the butter. Mix all the ingredients except the ground meat. Then add the mixed ingredients to the meat, that way you don't overwork the meat.
Place in shallow baking pan shaping into a loaf shape.
Top with mixture of catsup, brown sugar and Dijon mustard (adjust the proportions to suit your taste). Place bacon rashers over topping and then dot bacon with more of the catsup topping.
Bake 1 1/4 hours at 350�F.
