Ingredients

1/2 Pound ground beef
1/2 Pound ground sausage
1 Cup onion, chopped
1 (6 oz) Can tomato paste
1/2 Cup water
1 Teaspoon chipotle chile pepper
1/2 Teaspoon salt
4 Cups elbow macaroni, cooked
2 1/2 Cups shredded Monterey Jack cheese, divided

Instructions

In large skillet or Dutch oven, cook beef, sausage and onion over medium high heat until browned and crumble. Drain. Stir in tomato paste, water, chile pepper and salt. Add macaroni and 2 cups cheese, stirring until cheese is melted. Top with remaining 1/2 cup cheese before serving.
Note: Chipotle chile peppers are jalapeno peppers native to Mexico that turn dark brown and wrinkly after being smoked. This ingredient delivers a smoky and intense meaty flavor to many dishes. It is commonly used in making adobo sauce.
