Ingredients
1 Pound ground beef
1/2 Cup celery, chopped
1 Cup water
2 Cubes beef bouillon
1 Teaspoon chili powder
1/2 Cup uncooked barley
1/2 Cup onion, chopped
1 (36 oz) Can V-8 juice
1 Large can crushed or stewed tomatoes
1 Teaspoon salt
1/4 Teaspoon pepper
1 Can corn or green beans, drained (optional)
Instructions
In large heavy saucepan brown beef and onion, drain then stir in remaining ingredients and heat to a boil. Reduce heat and cover. Simmer until barley is tender, about 1 hour. You may need to add a bit more water if it gets too thick. This meal is good served with garlic bread.
