Ingredients
2 Cups boiling water
2 (3 ounce) Boxes cherry gelatin
1 (16 ounce) Can pitted cherries, packed in water, drained
1 Pint vanilla ice cream, softened
1 Cup sour cream
Whipped cream for garnish
Instructions
In a large bowl, combine boiling water and gelatin. Stir until gelatin dissolves. Cool to room temperature. In a blender or food processor, puree cherries. Add to gelatin mixture; stir until well blended. In a medium bowl, beat ice cream and sour cream together using medium speed of an electric mixer. Stir ice cream mixture into gelatin mixture. Pour into a 9� x 13" baking pan. Cover and refrigerate until set. Cut into 3" squares and garnish with whipped cream.
