Ingredients

3/4 Cup butter flavored shortening
1 Cup peanut butter
1 1/2 Cups firmly packed brown sugar
1/2 Cup water
1 Egg
1 Teaspoon vanilla
3 Cups oats, quick or old fashioned, uncooked
1 1/2 Cups flour
1/2 Teaspoon baking soda
Granulated sugar

Instructions

Beat the first three ingredients together until creamy. Beat in the water, egg, and vanilla. Add the combined dry ingredients. Mix well. Cover and chill for about two hours. Heat the oven to 350F. Shape the cookie dough into 1� balls. Place on an ungreased cookie sheet. Flatten the cookies with tines of a fork dipped in granulated sugar to form a crisscross pattern. Bake for 9 to 11 minutes or until the cookie edges are golden brown. Cool for one minute on the cookie sheet. Remove to a wire rack to cool completely.
