Ingredients

4 (14 oz) Cans chicken broth
2 (10 oz) Can RoTel mild diced tomatoes & green chilies, undrained
1 (15 oz) Can tomato sauce
2 (16 oz) Package frozen mixed vegetables
4 Cups water
1 Cup acini de pepe pasta
18 Tortilla chips, broken, optional
1/2 Cup shredded cheddar cheese

Instructions

Combine broth, undrained tomatoes, tomato sauce, vegetables and water in a stockpot. Bring to a boil over medium-high heat add pasta. Reduce heat to low; simmer 15 minutes until pasta is cooked through, stirring occasionally.
Serve in bowls with a sprinkle of cheese on top.
