Hearty Beef Vegetable Soup with Noodles

Ingredients

1 Pound ground beef
1 Onion, chopped
5 Beef bouillon cubes
2 Cups water
6 Cups water
1 (14 oz) Can tomato sauce, prepared
1 (15 oz) Can diced tomatoes
3/4 Cup celery, chopped
1 (16 oz) Package frozen mixed vegetables
1 Tablespoon dried oregano
1 Tablespoon chili powder
1 Teaspoon salt
1/2 Teaspoon ground black pepper
1/4 Teaspoon cayenne pepper
1 1/2 Tablespoons olive oil
1 1/2 Cups uncooked noodles
Freshly grated Parmesan cheese

Instructions

In a large stockpot over medium-high heat, brown ground beef and drain. Add onion to skillet and cook until onion is translucent but crisp. Combine bouillon cubes and 2 cups water and heat in microwave to dissolve bouillon. Add bouillon and all remaining ingredients to stockpot and bring to a boil; reduce heat and simmer, partially covered, for 30 minutes. Stir noodles into the soup mixture and heat on low for another 12 to 14 minute or until noodles are tender. Serve with grated Parmesan cheese.
