Ingredients

1 Package Hurst's� 15 Bean Soup
1 Pound ham, ham hocks, smoked sausage or mild Italian sausage, cooked
1 Cup onion, chopped
1 (15 oz) Can diced or stewed tomatoes
1 Teaspoon chili powder
Juice from 1 lemon
2 Garlic cloves, minced

Instructions

Place beans in a large pot, cover with 2 quarts of water. Allow beans to soak overnight, or at least 8 hours.
After soaking, drain excess water, and add 2 quarts of fresh water and meat.
Bring to a rolling boil, reduce the heat and simmer covered for 2 1/2 hours.
After simmering, add onion, tomatoes, chili powder, lemon and garlic. Simmer for an additional 30 minutes.
Add contents of ham packet 1 to 2 minutes before cooking is completed, salt and pepper to taste.
