Ingredients
1 Tablespoon vegetable oil
1 Pound sweet Italian sausage links
1 Large green bell pepper cut in 1/2" strips
1 Large red bell pepper cut in 1/2" strips
4 Cups potatoes, diced
1 Package onion soup mix
1 1/2 Cups water
Instructions
In a large skillet, heat oil over medium high heat and brown the sausage, remove sausage and reserve the drippings. Cut the sausage into 1� slices and set aside.
Add the peppers to the reserved drippings and cook, stirring frequently, 2 minutes. Add the potatoes and the onion soup mix blended with the water. Bring to a boil over high heat. Reduce heat to low and simmer, covered, 10 minutes. Return the sausage to the skillet and simmer, covered, 5 minutes or until the sausage is done and the potatoes are tender.
