Ingredients

2 Cups chicken thighs, cooked & chopped
2 Cups uncooked spaghetti noodles, broken into 2" pieces (about 7 ounces)
1 Cup celery, sliced 1/4" thick
1 Cup red bell pepper, chopped
1 Cup onion, chopped
1 Cup chicken broth
1/2 Teaspoon salt
1/4 Teaspoon freshly ground black pepper
1 (10 3/4 oz) Cans cream of chicken soup
1 (10 3/4 oz) Cans cream of mushroom soup
1 (4 oz) Can mushroom pieces, drained & chopped
Cooking spray
1 1/2 Cup shredded cheddar cheese, divided

Instructions

Preheat oven to 350�F.
Combine first 5 ingredients in a large bowl.
Combine broth, salt, pepper, soups and 1 cup of cheese in a medium bowl, stirring to combine well.
Add soup mixture to chicken mixture; toss.
Pour mixture into an 8� x 13� baking pan coated with cooking spray.
Sprinkle 1 cup cheese over the top of casserole.
Cover with foil coated with cooking spray. Bake at 350�F for 45 minutes.
Uncover and bake an additional 15 minutes.
