Ingredients
4 Waffles, (like Eggo), toasted & chopped, divided
1 Pound pork sausage, cooked, divided
9 Tablespoons cheddar cheese, divided
8 Eggs
1 Cup milk
1 Tablespoon dry mustard
Salt & pepper to taste
Maple syrup, optional
Instructions
Layer half of the toasted, chopped waffles into the bottom of a 2 quart casserole dish. Add half the cooked sausage and 1/3 of the cheddar cheese. Repeat for second layer.
In a medium bowl mix the eggs, milk, and dry mustard, salt and pepper until well combined.
Pour egg mixture over ingredients in casserole dish, cover dish with plastic wrap and refrigerate overnight.
Preheat oven to 350�F. Remove plastic wrap and cover casserole loosely with aluminum foil. Bake for 40 minutes. Remove foil and top casserole with 3 tablespoons of cheddar cheese. Bake an additional 10 to 15 minutes or until eggs are completely set.
Serve with maple syrup if desired.
