Ingredients
1 Pound regular breakfast sausage, cooked, crumbled & drained
3 Medium baking potatoes, baked, peeled & cut into 1" cubes
1?4 Cup butter
1?2 Cup onion, chopped
1?4 Cup all-purpose flour
3 Cups chicken broth
1?2 Teaspoon thyme
2 Cups milk
1 Cup half & half
3?4 Cup parmesan cheese, grated
Salt & pepper, to taste
Instructions
Melt butter in a large saucepan over medium heat, add onions and saute until tender.
Stir in flour and cook for 1 minute, stirring constantly.
Gradually stir in chicken broth; bring to a boil stirring frequently. Continue cooking until thickened and smooth.
Stir in milk, cream, thyme, sausage and potatoes, bring to a boil, reduce heat and simmer and cook uncovered for 15 minutes.
Stir in parmesan cheese. and serve hot.
