Ingredients

3 Cups cold water
2 1/2 Tablespoons salt
2 to 4 Pork chops, center cut, bone on
Olive oil
Salt & pepper to taste

Instructions

Bring one cup of water to a boil, then add all of your salt, stir it until it dissolves and then remove the pot from the heat.
Add the other two cups of cold water to bring it down to room temperature.
Place the pork chops in a shallow dish, and pour the brine over them so that they are completely covered in the brine.
Cover the dish and place it in the refrigerator for 30 minutes to 4 hours.
