Ingredients
6 Hard boiled eggs, peeled & chopped
4 Slices crispy bacon, crumbled
1/8 Cup bacon drippings
1/8 Cup flour
2 Cups milk, not skim
Salt & pepper to taste
4 Biscuits or toast
Instructions
Cook bacon and pour off excess grease keeping about 1/8 cup in the pan.
In the same pan add your flour, salt and pepper.
On low heat, mix together until you have a golden roux.
Add the milk stirring constantly until thickened.
Add the bacon and chopped eggs.
Cook 4 minutes, heating through.
Serve over biscuits or toast.
