Ingredients

3 Tablespoons cumin
Pinch salt
Pinch oregano
1/4 Teaspoon dry mustard
1 1/2 Whole garlic bulbs, chopped
12 Ounces tomato sauce
12 Ounces whole tomatoes, undrained
3 Canned green chilies, chopped
1/2 Ounce tequila
1 (12 oz) Can beer
4 White onions, chopped
10 Pounds lean brisket, chopped
2 Pounds ground fresh pork
2 (1.7 oz) Bottles chili powder
2 Beef bouillon cubes
1/2 Teaspoon brown sugar

Instructions

Brown brisket and onions in 4 tablespoons oil; add rest of ingredients. Cover and simmer 3 hours, stirring occasionally. Let chili remaining untouched for the last 30 minutes of cooking.
